6 tbsp olive oil

2 tbsp tomato paste
3/4 cup tomato puree
1/3 lb mozzarella cheese, chopped

2 stalks parsley, coarsely chopped

Dissolve the yeast in 3/4 cup of lukewarm water. Next, sieve the flour into a bowl with the salt, then mix in 4 tbsp of the olive oil. Knead the mixture to create a smooth dough. Draw it into a ball with your hands, then cover and leave in a warm place for 30-45 mins.

Meanwhile, heat the rest of the oil in a pan and fry the onion with the garlic until it is translucent. Stir in the ground beef and fry, continuing to stir. Season, then add the peppers, paprika, and tomato paste and fry for 5 mins. Then add the tomato puree and cook for 5 more mins. Fold in the mozzarella and the chopped herbs, keeping some herbs aside for decoration.

Knead the dough a second time, then roll out onto a floured surface to create a disc about 12 inches in diameter. Place the meat sauce on one half of the pizza dough, ensuring that there is a 1/2-3/4 inch border around the edge. Brush the edges of the circle with water, then fold the dough over so it covers the sauce completely and creates a semi-circular parcel. Press the edges of the dough together to seal the parcel.

Leave the calzone to rest for about 15 mins, then brush with a little water and sprinkle over the reserved herbs. Place on a greased and floured baking sheet and bake in the oven at 400u00b0F for about 25 mins. Serve hot.
