1 tablespoon olive oil
2 tablespoons soy sauce
1 1/2 teaspoons rubbed sage
1 tablespoon ground fennel seeds
1/4 teaspoon red pepper flakes
3 garlic cloves, pressed or minced
1 head of romaine lettuce (about 8 cups sliced or torn leaves)
Caesar Dressing (page 220)
Grated Parmesan or Pecorino Romano cheese (optional)

Cut the tofu into 1-inch cubes and place them in a single layer in an oiled baking dish.
