1 leek, chopped finely
2 garlic cloves, chopped
1 small onion, chopped
3 slices bacon, cut into small pieces
3 tomatoes, chopped roughly
2 tablespoons tomato juice
1 ounce tarragon leaf
2 slices crusty bread
2 eggs, soft-boiled, peeled and halved lengthways
8 green olives, chopped
4 anchovy fillets

Heat the olive oil in a heavy-based frying pan.

Add the leek, garlic and onion and fry gently until softened.
