Bruschetta Toastie

   In a bowl, combine the tomatoes, coriander, garlic, olive oil and seasoning.

   Stir and ideally leave the flavours to infuse for 15-20 minutes.

   Preheat the sandwich toaster to its highest setting.

   Brush the bread with olive oil on one side and place the first slice the toaster (oiled side down).

   Cover the bread with the tomato mixture and spread it out evenly, filling the recesses.

   Cover with the second slice of bread (oiled side up) and carefully close the lid.

   Cook for 3 minutes until crisp and golden.

   Serve immediately.
