Preheat broiler.

In small bowl, mix mayonnaise, mustard, salt, and pepper until blended.

Lightly oil rack in broiling pan.

Place cod on rack in broiling pan.

Place pan in broiler, 4 inches from heat source.

Broil cod until just opaque throughout, 5 to 7 minutes.

Remove broiling pan from broiler.

Brush mayonnaise mixture on fish.

Return pan to broiler; broil until mayonnaise mixture is lightly browned and bubbling, 1 to 2 minutes longer.

Lemon Topping: Prepare as directed but substitute 1/2 teaspoon freshly grated lemon peel for Dijon mustard.

Horseradish Topping: Prepare as directed but substitute 1 teaspoon bottled white horseradish for Dijon mustard.

Dill-Pepper Topping :Prepare as directed but substitute 2 tablespoons chopped fresh dill for Dijon mustard and 1/4 teaspoon coarsely ground black pepper for ground black pepper.

Lime-Jalapeno Topping: Prepare as directed but substitute 1/2 teaspoon freshly grated lime peel for Dijon mustard and add 1 small jalapeno, seeded and minced, to mayonnaise mixture.

Parmesan Topping:Prepare as directed but substitute 2 tablespoons freshly grated Parmesan cheese for Dijon mustard.

Dried Tomato Topping:Prepare as directed but substitute 1 dried tomato, finely chopped, for Dijon mustard.
