Cream butter with the two sugars, then slowly add remaining ingredients. If the dough does not seem to take shape and remains crumbly, add a small amount more of the vanilla extract. Pat onto small ungreased cookie sheet to approx. 1/2 inch thickness. With a fork poke a symmetric area of holes into the dough to resemble the appearance of storebought shortbread. Bake in 325 degree (convection) oven for approx. 25 min.

Sprinkle some granulated sugar on the shortbread as soon as it comes out of the oven and cut into small bars immediately. Enjoy!
