Worcestershire sauce; 2 c. beef stock; 1/2 c. red wine; 1 1/2 tsp thyme leaves; 1 x bay leaf; 1/2 c. finely-minced fresh parsley salt to taste Freshly-grnd black pepper to taste

6 Tbsp. butter
1/2 c. finely-minced onion
1 1/2 tsp finely-minced garlic
1/2 c. finely-minced scallions
1/2 c. finely-minced boiled ham
1/2 c. finely-minced mushrooms
1/3 c. all-purpose flour
2 Tbsp. Worcestershire sauce
2 c. beef stock
1/2 c. red wine
1 1/2 tsp thyme leaves
1 x bay leaf
1/2 c. finely-minced fresh parsley salt to taste Freshly-grnd black pepper to taste

Heat the butter in a large saucepan or possibly Dutch oven and saute/fry the onion, garlic, scallions and ham for 5 min.

Add in the mushrooms, reduce the heat to medium and cook for for 2 min.

Blend in the flour and cook, stirring for 4 min, then add in the Worcestershire sauce, beef stock, wine, thyme and bay leaf.

Simmer till the sauce thickens, about 1 hour.

Before serving, remove the bay leaf and add in the parsley.

Season with salt and pepper to taste.
