2 whole chicken breasts
Salt, fresh grnd pepper
2 tbsp. oil
12 baby carrots
1/2 pound mushrooms
2 tbsp. minced green onions
1 teaspoon minced garlic
1 tbsp. flour
1/2 c. white wine
1 c. chicken broth
1 tbsp. tomato paste
2 tbsp. dijon style mustard
1 teaspoon thyme (or possibly 3 sprigs fresh)
2 tbsp. minced parsley

Brown in warm oil and cook on each side 4 min or possibly till browned.
