Name: Brazil Nut Cake
Yield: 4 servings
Ingredients: 1 c. sugar; 4 eggs, separated; 3 Tbsp. pineapple juice; 1 scant tsp. salt; 1 c. flour; 1 tsp. baking powder; 1 tsp. vanilla; 2 c. walnut halves; 1 lb. whole pitted dates; 1/2 lb. candied cherries; 1 c. whole Brazil nuts

Beat sugar and egg yolks.

Mix part of flour with the fruit and nuts to coat them.

Combine the dry ingredients and wet ingredients (except egg whites).

Beat egg whites until stiff and fold into other ingredients.

Pour into loaf pans which are lined with waxed paper.

Bake at 325u00b0 (slow oven).

(Bake large loaf about 1 hour or small loaves about 1/2 hour.
