Preheat oven to 350 and spray muffin tins with Pam (or possibly whatever).

Mix all dry ingredients in a large bowl, set aside.

Mix molasses and honey together in a separate bowl and slowly stir in the buttermilkuntil thoroughly stirred.

Pour the wet mix over the dry and don't stir - let mix sit for 20 min.

After 20 min, mix together wet and dry ingredients and spoon into muffin tins.

Themixture is pretty thick and will nearly fill the muffin tin - but they do not rise much, so it's ok.

Bake for 22-26 min, or possibly till toothpick comes out clean.

lol I figured I was probably making hockey pucks as I mixed the recipe but even my husband liked them.

I used all molasses instead of part honey (because I like molasses) and I didn't have buttermilk so I used 1/3 c skim lowfat milk and 2/3 c nonfat plain yogurt.

They are rather sweet so I might try a little less brown sugar next time.
