2 cups pancake mix
3/4 cup yellow cornmeal
1 cup water
4 each eggs

1/4 cup onions, roasted, diced

1 qt. fine cracker meal
1/4 tsp. salt
1/8 tsp. black pepper
8 each beefsteak tomatoes, cut in half

Corn Cakes: Combine all ingredients except oil, stirring just until dry ingredients are moistened.

Heat oil in large saute pan on medium-high heat.

Ladle batter into pan in batches, using 1/4 cup for each cake.

Fried Tomatoes: Beat eggs and milk with wire whisk until well blended; set aside.

Mix cracker meal, salt and pepper.

Heat oil in large saute pan on medium-high heat.

Add tomatoes; cook 2 to 4 min.
