Grease and line base of tin with baking paper. Combine the apples, dates, soda and water in a bowl. Stand mix covered for 10 min.

Beat butter, vanilla and sugar in a bowl with electic mixer until combined. Fold in sifted flour alternately with apple and datre mix. Spread mix into prepared pan. Bake in a mod 180dg preheated oven for 50 0ven.

To make topping

combine butter, brown sugar and milk in a pan. stir over heat until butter is melted and sugar is dissolved. Stir in coconut.

Remove cake from oven and spread with warm coconut topping. then return to oven and bake at 180c for a further 20 min or until topping is golden. Stand cake in pan for 5 min before turning onto a wire rack to cook completley
