Heat oil in heavy medium saucepan over medium-high heat. Add onion and saute until beginning to soften, about 5 minutes. Add thyme and saute 1 minute. Add bourbon and simmer until mixture is reduced to glaze, about 1 minute. Mix in barbecue sauce. (Can be prepared 1 day ahead. Cover and chill.)

Prepare barbecue (medium-high heat). Season ribs or chops with salt and pepper; grill 5 minutes per side. Brush with sauce; continue grilling until cooked through, brushing with sauce and turning every 5 minutes, about 15 minutes longer for ribs and 10 minutes longer for chops (total cooking time for ribs will be about 25 minutes; for chops about 20 minutes).
