Scrape the pod clean and add both the paste and the pod to the liquid. Bring the liquid to a simmer on a medium low heat. Once bubbling turn down the heat to low and remove the vanilla pod.", "Slowly, very slowly, add 1/2 a cup of the hot liquid to the egg yolks while whisking vigorously. Keep adding the liquid to yolks, all the while whisking, until you've split the mixture in half. Add the egg/ custard mixture to the remaining liquid in the pot and raise the heat slightly. Slowly simmer the custard until thickened and a nice layer is left behind on the back of a spoon.", "Build a quick ice bath and pour the custard into a bowl. Stir while in the ice bath until the base is at room temperature. Now add the blended and strained bourbon apple puree.
