Ingredients: 1 1/2 c. all-purpose flour; 1/2 c. sugar; 1 1/2 tsp baking pwdr; 1/3 c. margarine, soft; 2 x egg whites; 1 tsp vanilla; 3 c. blueberries frzn, don't thaw Topping; 2 Tbsp. all-purpose flour; 2 c. plain lowfat yogurt; 1 x egg lightly beaten; 2/3 c. sugar; 2 tsp lemon or possibly orange rind grated; 1 tsp vanilla

Servings: persons

1 1/2 c. all-purpose flour
1/2 c. sugar
1 1/2 tsp baking pwdr
1/3 c. margarine, soft
2 x egg whites
1 tsp vanilla
3 c. blueberries frzn, don't thaw Topping
2 Tbsp. all-purpose flour
2 c. plain lowfat yogurt
1 x egg lightly beaten
2/3 c. sugar
2 tsp lemon or possibly orange rind grated
1 tsp vanilla

In food processor or possibly mixing bowl, combine flour, sugar, baking pwdr, margarine, egg whites and vanilla; mix well.

Press into bottom of 10 inch square cake pan, springform or possibly flan pan, sprinkle with blueberries.

Topping: In bowl, sprinkle flour over yogurt.

Add in egg, sugar, rind and vanilla; mix till smooth.

Pour over berries.

Bake in 350/180 oven for 60-70 min or possibly till golden brown.

Serve hot or possibly cool.
