Made these for some friends last night and they were fantastic. Basically all it is is a can of rinsed refried black beans, 2 bags of pre cut and chopped butter nut squash (trader joe's) 1 shallot, olive oil, cinnamon, salt + pepper + fresh cilantro. Now, you can add some type of crema which will make them even tastier. I kept them non-spicy cause I had some guests who didn't care for the heat. Jalapeno pepper greek yogart would make a nice addition for some more sweet heat. Or be creative and try whatever you want but definitely add some spice to balance the sweet of the squash. Serve them on some corn tortillas and call it a damn day! Play with it until you've mastered an amazing recipe then show them off to your friends.
