In a small bowl, combine ginger, cilantro, green onion, lime zest, lime juice and sesame oil and stir well. Place one wonton wrapper on work surface with a corner facing you. (Keep the rest of the wrappers covered with a damp cloth.) Place one oyster diagonally near the bottom of wrapper. Spoon 1/2 tsp. ginger mixture on oyster. Fold bottom corner of wrapper over oyster, fold in sides and roll. Cover with damp cloth and repeat with remaining oysters.

In large skillet or deep fryer, heat oil to 375F or until a small bread cube dropped in the oil sizzles and turns golden. Working in small batches, fry oysters until golden, about 2 minutes. Using a slotted spoon or spider, transfer to paper towel to drain. Serve hot with dipping sauce.
