1
First off, cook your bacon in a skillet over medium heat until its really crispy.
-
2
It is important that you retain the bacon fat!
-
3
I like to grill mine and catch the bacon in a baking tray under the grill (I think Americans call this kind of grill a broiler).
-
4
While the bacon is cooking, slice the tomato, and spread the slices on a paper towel to absorb some of the water.
-
5
Sprinkle the tomato slices with a pinch of sea salt and some freshly ground black pepper.
-
6
Wash your lettuce.
-
7
Thats all you have to do with that.
-
8
Next, take your really nice white bread I like crusty sourdough.
-
9
This is the bit where it gets awesome.
-
10
Take the bacon fat from the cooked bacon, and lightly dip the bread in it on one side of each slice.
-
11
Next, take the garlic clove and slice in half.
-
12
Rub the other side of the bread with the garlic clove.
-
13
Toast the bread until crisp, but keep an eye on it in case it burns.
-
14
I just use a regular toaster, but you MIGHT be safer using your grill.
-
15
This way it gets a gorgeous smoky bacon flavor.
-
16
When the bread is toasted, slather on the mayonnaise, top with the crispy bacon.
-
17
Add the tomato slices, salt and pepper to taste, and the lettuce.
-
18
Then sandwich the two slices of bread together.
-
19
Cut the sandwich in half, and enjoy.
