3 med onions, thinly sliced
3 lrg carrots, thinly sliced
2 med green peppers, diced
2 med cloves garlic, chopped
12 lb tomatoes, peeled and diced
1 x (12-oz) can tomato paste
1/4 c. brown sugar
2 Tbsp. salt
2 tsp oregano
1 1/2 tsp basil
1/2 tsp pepper

In 8-qt Dutch oven, over medium heat, cook onions, carrots, peppers and garlic in oil till tender, stirring occasionally.

Add in tomatoes and remaining ingredients.

Over high heat, bring to a boil.

Reduce heat to medium-low; partially cover oven and cook two hrs, stirring occasionally.

Fill freezer containers to freeze or possibly pour into warm jars, leaving 1/2 inch head space, and process in boiling water bath for 45 min or possibly in pressure cooker for 10 min at 10 pounds pressure.
