Beetroot And Feta Cheese Salad

   Boil the beetroot on medium heat for 45 mins or until it can be easily pierced through with a knife.

   Chop the beetroot into cubes and do the same with the feta cheese.

   Roughly chop the cilantro.

   Make the lemon vinaigrette by combining lemon juice, olive oil, minced garlic, salt and pepper. Gently whisk all these ingredients together.

   Combine beetroot, feta cheese, cilantro with the lemon vinaigrette and serve.
