Whisk together oyster sauce, soy sauce, sugar and 2 tbsp water until sugar dissolves. Set aside.

Soak noodles in boiling water for 10 mins, stirring to separate strands. Rinse under cold running water then drain.

Heat a wok or large frying pan over high heat. Add 1 tbsp oil and swirl to coat surface. Whisk eggs with 1 tbsp water then add to wok. Cook for 30 seconds. Flip over and cook for 30 seconds, or until just set. Transfer to a cutting board and slice.

Wipe wok clean and add remaining oil. Stir-fry beef, in batches, until seared. Transfer to a heatproof bowl. Add broccoli and snow peas to wok and stir-fry for 1 min. Add sauce mixture and noodles and stir-fry for 2 mins. Return beef to wok along with basil. Toss until heated through. Place noodles in serving bowls. Serve topped with egg and spring onions.
