Ingredients: 1 pound grnd beef; 1/2 c. minced onion; 1 env. taco seasoning (mild or possibly warm); 1 (4 ounce.) can green chilies, liquid removed and minced; 1 1/4 c. lowfat milk; 3/4 c. biscuit mix; 3 Large eggs; 2 tomatoes, sliced and diced; 1 c. shredded cheese (Cheddar or possibly Monterey Jack); Shredded lettuce; 1/2 c. lowfat sour cream

Servings: persons

1 pound grnd beef
1/2 c. minced onion
1 env. taco seasoning (mild or possibly warm)
1 (4 ounce.) can green chilies, liquid removed and minced
1 1/4 c. lowfat milk
3/4 c. biscuit mix
3 Large eggs
2 tomatoes, sliced and diced
1 c. shredded cheese (Cheddar or possibly Monterey Jack)
Shredded lettuce
1/2 c. lowfat sour cream

Heat oven to 400 degrees and grease a 10 x 1 1/2 inch pie pan.

Cook and stir beef and onion till brown; drain.

Stir in taco seasoning and pour into pie pan.

Sprinkle with chilies.

In another bowl, beat with hand mixer lowfat milk, biscuit mix and Large eggs for 1 minute till smooth.

Pour on top of beef mix and bake 25 min.

Remove and top with diced tomatoes.

Sprinkle with cheese and bake again 8 to 10 min.

Cold 5 min.

Add in lettuce all around.

Add in lowfat sour cream in middle.
