Name: Beef Stroganoff
Yield: 4 servings
Ingredients: 1 1/2 lb. round steak, sliced (beef heart may be used); 1/4 c. flour; 1/4 c. butter; 1 can beef consomme; 1 c. sour cream; 3 c. noodles, cooked; dash of pepper; 1/2 c. chopped onion; 1 can sliced mushrooms, drained; 1 small clove garlic, minced

Cut steak into thin strips.

Dust with flour and a dash of pepper.

Brown meat in butter in a large skillet.

Add mushrooms, onion and garlic.

Brown all lightly.

Stir in beef consomme. Cover and cook for 1 hour or until meat is tender.

Gradually stir in sour cream; cook 5 minutes.

Serve over 3 cups of cooked noodles.
