2 c. sliced mushrooms

1 1/2 c. dry Minute rice
1/2 c. sour cream
1/3 c. catsup or tomato paste
8 cherry tomatoes, halved
fresh parsley, chopped

Add mushrooms and onion; saute about 5 minutes.
