Beef Roast In The Coals

   Prepare fire so that coals are hot.

   Cover entire surface of meat with mustard.

   Pat salt into mustard until it won't hold any more.

   Insert meat thermometer.

   Place meat directly on coals; rake coals around meat.

   Cook about 45 minutes.

   Turn over and cook 45 minutes (140u00b0 rare, 160u00b0 medium and 170u00b0 well done). Remove meat from coals.

   Remove black crust which formed.

   To serve, across the grain.
