2 shallots
1/2 cup cognac
1/2 cup sherry wine
1 1/2 cups heavy whipping cream

2 tablespoons coarse grain mustard
1 tablespoon fresh parsley, chopped
2 teaspoons mixed peppercorns

2 tablespoons butter

Slice 1-1/2 to 2 pounds of beef medallions into rounds, about 3/4-inch thick.
