Ingredients: 1 pkg. taco seasoning; 1 1/2 lb. ground beef; 1/2 c. bell pepper or to taste; 1/2 c. onion or to taste; 1 can whole kernel corn; 1 can tomato sauce; 1 can onion rings, split; grated cheese; 5 lb. ground meat (about 1/3 each: beef, veal and pork (or use 5 lb. fresh ground turkey breast for reduced fat; 1 c. bread crumbs; 3 eggs or equivalent in cholesterol-free egg substitute; 1/2 c. ketchup (catsup?); 1 1/2 c. Bloody Mary Mix (your preference; I like Snap-E-Tom); 4 bay leaves, roughly crumbled; 2 Tbsp. thyme, crumbled; 1/2 c. finely chopped parsley; 2 onions, minced (optional); salt and freshly cooked pepper; uncooked bacon strips (can use turkey bacon for low-fat)

Preheat oven to 325u00b0.

Mix all ingredients, except bacon, and form into two loaves.

Place in tureens (if you have them, it makes a nice presentation) or 9-inch loaf pans.

Lay bacon strips on top to cover and bake for 1 1/4 hours.

Drain any accumulated fat. (There will be very little if you use the turkey variations.)

If serving cold, remove bacon and invert loaf; some jelly glaze will appear on the top.
