Ingredients: 1/2 pound sweet Italian sausage; 1/2 pound warm Italian sausage; 1 tbsp. vegetable oil; 1 3/4 c. minced onion; 3/4 c. mushrooms, sliced (3 c.); 3 (16 ounce.) cans pork & beans in tomato sauce; 1/3 c. tomato juice; 1 teaspoon leaf oregano, crumbled; 1 teaspoon salt; 1/8 teaspoon crushed red pepper flakes; 1 c. uncooked long grain rice

1/2 pound sweet Italian sausage
1/2 pound warm Italian sausage
1 tbsp. vegetable oil
1 3/4 c. minced onion
3/4 c. mushrooms, sliced (3 c.)
3 (16 ounce.) cans pork & beans in tomato sauce
1/3 c. tomato juice
1 teaspoon leaf oregano, crumbled
1 teaspoon salt
1/8 teaspoon crushed red pepper flakes
1 c. uncooked long grain rice

Cook sausage in vegetable oil in a large skillet till brown and no pink remains, about 20 min.

Remove with a slotted spoon to a Dutch oven or possibly heavy saucepan.

Pour off all but 2 Tbsp.

Saute/fry onion and mushrooms till tender, about 3 min.

Add in onion mix to sausage.

Add in beans, tomato juice, oregano, salt and pepper to sausage.

Bring to boiling; lower heat; simmer 15 min.

While beans cook, cook rice following label directions.
