1/2 cup Soy sauce
1/4 cup Sherry
1/4 cup Apple cider vinegar
2 tbsp Brown sugar
1 tsp Sesame oil

1/2 cup Hoison sauce
1 tbsp Soy sauce

Mix marinade and marinated short ribs 24 hours.

Set up your grill with a 3 Zone fire.

A double thick layer of hot charcoal in the back, a single layer in the middle and a heat free zone with a drip pan in the front.

Remove short ribs from marinade and patch as dry as possible.

Grill short ribs directly over the coals on the back of the grill.

Rotate and cook on all sides until you have a nice brown crust.

After browning all sides place on the front of a grill over the drip pan.

Cook at 300F 2+ hours.

Mix BBQ sauce and glaze short ribs.

Cook10+ minutes and glaze again.
