3/4 c. cooked couscous (see Note)
3/4 c. finely minced onions
1 x egg white
3 x cloves garlic chopped
1 Tbsp. chopped fresh parsley
4 x very thin slices pepperoni chopped
4 x thin slices mozzarella cheese
8 slc lightly toasted Italian bread
1/2 c. crushed tomatoes warmed
8 x basil leaves
4 x pepperoncini

Prepare grill for indirect cooking.

Coat a grill rack with cooking spray; place on grill.

Combine beef, couscous, onions, egg white, garlic, parsley and pepperoni in large bowl; mix gently but thoroughly.

Shape into 4 patties, each 3 1/2 to 4 inches in diameter.

Arrange on grill rack.

Grill over indirect medium heat till done, 8 to 10 min per side, turning once and topping with mozzarella during last 3 min of cooking.

Place patties on 4 toasted Italian bread slices; top with crushed tomatoes, basil, pepperoncini, and remaining bread slices.

Note: For couscous: Bring 3/4 c. water to a boil in a 2-qt saucepan.
