Basic Tomato Sauce (For Pizzas, Pasta Etc)

   1. In a large frying pan, cook the garlic in olive oil on low heat until done (2-3 mins)

   2. Add the tomatoes and basil and start to mash the tomatoes with the back of a wooden spoon.

   3. Season with salt & pepper. Once it comes to the boil, remove the pan from heat.

   4. Strain the tomatoes through a course sieve, mashing the tomatoes with the back of a spoon.

   5. Mash as much as you can, then return to the pan.

   6. Bring to the boil and simmer for 10-15 minutes until it becomes the perfect consistency for your pizza.
