Barley Porridge – a delicious recipe with barley, water, butter, carrot, potato, onion. Easy to follow and perfect for any occasion.

Wash barley thoroughly. Drain.

Heat little olive oil in the pot and add barley. Heat for 2-3 minutes while stirring it.

Add hot water ( or preferably pre-cooked broth). Stir once and let cook on the low heat for 40 minutes without stirring the barley again. Do keep an eye on that the water would not disappear completely... if so, just add little extra boiled and hot water.

While the barley is cooking cut your veggies and sausage. Fry them in little olive oil till soft. I normally start with potato, carrots, then onion and last the sausage.

Add the fried ingredients to the barley, add little butter if you like, spices and mix well.

Garnish with your favorite greens. Buon Appetito!!!
