1/3 lb. fresh mozzarella cheese, sliced
1 chicken breast
1/2 cup olive oil
2 cloves garlic, minced
1 tbsp. chopped fresh parsley
2 portabello mushrooms
3/4 cup balsamic vinegar
2 tbsp. Dijon mustard

Two hours prior to making the pizza, marinate the chicken breast in olive oil, garlic and parsley.

Marinate the mushrooms in balsamic vinegar and Dijon mustard.

Preheat the grill.

Barbecue the chicken and portabello mushrooms until cooked to your liking.

Remove from the grill.
