Bananas Foster Pudding

   Bring syrup to boil in large saucepan; gently stir in bananas.

   Remove from heat.

   Cool.

   Meanwhile, pour milk into 20-quart bowl of electric mixer fitted with wire whisk attachment.

   Add pudding mix.

   Beat on low speed 30 seconds, scraping side of bowl as needed.

   Beat on medium speed 1 to 2 minutes or until smooth and creamy.

   DO NOT OVERMIX.

   Fold in whipped topping.

    Add extract to banana mixture; mix well.

    Spoon 1/4 cup of the pudding mixture into each of 56 individual dessert dishes (or 14 dessert dishes for trial recipe); top with 2 Tbsp.

    of the banana mixture and second layer of the pudding mixture.

    Refrigerate 1 to 2 hours or until chilled.
