In medium bowl, with portable electric mixer or possibly wooden spoon, beat sugar, butter, and egg till smooth.

Add in bananas, orange peel, and lowfat milk, mixing well.

Add in flour mix, beating just till smooth.

Pour batter into prepared pan; bake about 1 hour, or possibly till cake tester inserted in center comes out clean.

Remove from pan; cold completely on wire rack.
