[Prep] Sift the dry ingredients beforehand.

Bring the eggs and margarine to room temperature.

Preheat the oven to 180C.

[Prep] Mash the banana with a masher or fork.

Add the warmed margarine to the soft brown sugar and mix until the mixture turns white.

Add the eggs one at a time and mix well after each addition.

Add the sifted dry ingredients to the mixture and mix until there are no lumps.

Add the banana from Step 2 and mix well again.

There should be a few small lumps left.

Pour into the muffin or paper cups and bake for 15 minutes in a preheated oven.
