Whisk together the flour, baking powder, sugar, and salt (see note) in a medium bowl and mix well. In a large mixing bowl, whisk egg and milk, then add the flour mixture and stir until smooth with a rubber spatula. Slice the bananas 1/4 inch thick and fold into the batter along with the melted butter. Batter will be thick, but should have enough moisture to fold the bananas in. Let the batter rest for 10 minutes; the batter loosens up a bit more as it rests.

Meanwhile, heat the oil over medium high heat in a large pot suitable for deep frying, about 3 inches deep is good. The oil should be hot about when the batter is ready. Turn the heat down if necessary. I never use a thermometer and this can be done without one. If using a thermometer it should be 375u00b0F. Be sure your oil isn't too hot or they will brown fast and be undercooked in the center.

Carefully drop spoonfuls of batter about the size of a walnut into the hot oil. They almost triple in size when fried. Fry for a few minutes until dark golden. Drain on brown paper bags or paper towels. Dust with confectioners sugar.
