Preheat the oven to 400u00b0F. Grease a 10-inch springform pan and line the edge with aluminum foil. Cook the pasta in boiling salted water according to the package instructions. Drain.

Meanwhile, heat the oil in a skillet and saute the beef until browned and crumbly. Add the bacon and cook for 1 min. Add the onion, garlic, carrots and rosemary and saute for 2 mins. Add the tomato paste and stir in. Add the tomatoes and simmer over a low heat for 20 mins, stirring occasionally. Season with salt, black pepper and a pinch of sugar. Remove from the heat and mix with the pasta.

In a bowl, beat the eggs and 3/4 of the pecorino. Season with salt and a pinch of nutmeg. Stir into the pasta mixture. Spoon into the prepared pan and sprinkle with the remaining pecorino. Bake for 25-30 mins, until golden and bubbling. Allow to cool a little, then carefully remove from the pan and garnish with the reserved rosemary.
