Baked White Chocolate Cheesecake

   Pre-heat your oven to 140oC.

   Combine the cookie crumbs and butter, press into a 24cm spring form tin & refrigerate until firm.

   Beat the cream cheese until soft and creamy.

   Gradually beat in the cream, it will go thick and creamy (beat for 3-5 minutes).

   Whisk in the eggs and vanilla.

   Finally fold through the melted chocolate.

   Pour into the base (I pour over the back of a large spoon) and bake in the pre-heated oven for 75 minutes.

   The center should resemble set jelly.

   Leaven in the oven with the door open until at room temp (could take upto 2 hours).

    Refrigerate until serving time.

    Can be made upto 2 days ahead of time.
