Baked Potato Casserole

   Preheat oven to 350u00b0. After baked potatoes have cooled enough to remove from skins, peel and cut into 1-inch cubes. Spread half the potatoes into a 13 x 9 pan. Salt and pepper to taste. Sprinkle with bacon pieces. Spread half of sour cream over potatoes. Sprinkle half the cheese over the sour cream. Spread remaining potatoes over the first layer. Salt and pepper to taste. Sprinkle with bacon pieces. Spread remaining sour cream. Sprinkle remaining cheese on top. Bake at 350u00b0 for about 20 minutes or until heated throughout. Serve hot.
