Baked Mediterranean Chicken

   Heat the oven to 375F.

   Place the chicken and tomatoes in a roasting tin.

   Season wih plenty of black pepper, scatter over the capers, then add the olive oil and balsamic vinegar.

   Place in the oven and cook for 20 mins, then add the olives and cook for a further 5 mins or until the chicken is cooked through.

   Remove from the oven and serve on four warmed plates.
