Ingredients: 2 onions peeled and finely diced; 9/16 cup gouda cheese grated; 4 3/4 cups macaroni; 1 7/16 cups jalapenos sliced , drained; 3 1/2 tablespoons butter; 6 3/8 tablespoons plain flour; 3 1/8 cups milk; 1 1/2 teaspoons hot mustard medium; 1 1/8 cups carrots peeled and cut into thin strips; 1 green peppers each small red, yellow and, seeded and chopped finely; 1 1/4 cups radishes sliced; 1/2 cucumber sliced; 1/2 lettuce leafy; 7 tablespoons balsamic vinegar light; 1 pinch sugar; 3 tablespoons olive oil

6 3/8 tablespoons plain flour
3 1/8 cups milk
1 1/2 teaspoons hot mustard medium
1 1/8 cups carrots peeled and cut into thin strips
1 green peppers each small red, yellow and, seeded and chopped finely
1 1/4 cups radishes sliced
1/2 cucumber sliced
1/2 lettuce leafy
7 tablespoons balsamic vinegar light
1 pinch sugar
3 tablespoons olive oil

Preheat the oven to 325u00b0F. Grease a baking dish. Cook the pasta in boiling salted water according to package directions. Drain and set aside.

Meanwhile, melt the butter in a pan and saute the onions until soft. Add the flour and stir well. Gradually pour in the milk and bring to a boil, stirring constantly. Simmer for 3-4 mins then melt 2-3 tbsp of cheese into the sauce, add the mustard and season to taste. Add the drained macaroni and jalapenos. Put the mixture into the prepared dish, sprinkle with the remaining cheese and bake for about 20 mins.

To finish, mix the vinegar and sugar and season to taste. Drizzle in the oil and mix well. Toss with the remaining ingredients and serve in bowls with the macaroni and cheese.
