Baked herb chicken – a delicious recipe with chicken, thyme, basil, rosemary, garlic, black pepper. Easy to follow and perfect for any occasion.

Preheat oven to 350

Mix together thyme, basil, rosemary, garlic, salt, pepper and oil then with a fork stir until a paste is formed.

Set aside.

Slice onion and place in 13x9 baking pan.

In a seperate bowl add flour to water stirring with a fork until all the lumps disappear then add to pan.

Pat dry chicken, then with poultry shears or a sharp knife remove the backbone.

Press flat so that the cavity is now facing down

Apply paste to both sides of the chicken then place cut side down over the onions.

Cover tightly with foil and place in the oven for 40mins.

basting every 20mins.

Lower the temperature to 325 remove the foil and place under the broiler for 10mins.

checking constantly until browned.
