Preheat your oven to 450 F and line a large rimmed baking sheet with parchment paper.

In a food processor, crush the granola just slightly so that it still remains a little chunky.

Pour into a large plate and mix with the coconut flakes.

Add the oats, brown sugar and cinnamon into the food processor and blend until the oats are fine and flour-like.

Pour the egg whites into a separate bowl.

Peel and pit the avocado and cut each half into wedges (I got 4 wedges per each half of avocado).

Coat an avocado wedge in the oatmeal mixture and then in egg white.

Finally, press the avocado into the crushed granola, really pressing and packing it on until it coats the avocado wedge.

Place onto the prepared baking sheet.

Spray the avocado fries with cooking spray and bake for 7 minutes.

Flip and spray with a little more cooking spray, and bake until golden brown and crispy, about 3-5 minutes.

While the fries cook, blend the yogurt, strawberries, and sweetener in a food processor until creamy and smooth.
