Season the fish with a dash of salt and pepper.

Then coat the fish with corn starch.

Heat some oil in the pan and fry the fish for 3 minutes. Set aside.

In a bowl, mix the ff: oyster sauce, soy sauce, rice wine, black and white ground pepper. Set aside.

Using the same pan where you fried the fish, leave a tbsp of oil and saute onion rings for 2 minutes. Set aside.

Next using the same pan again, put the sauce you have made..the oyster,soy sauce and pepper mixture.

Wait until the mixture boils and put the fish back...make sure the fish is coated well with the mixture. Cook for about 5 minutes.

Turn off the heat and prepare your baking pan. Put aluminum foil at the bottom of baking dish.

Then start to lay down the fish side by side. Put onion rings on top and garnish with butter slices. Cover loosely with aluminum foil.
