250 gm pasta, spiral
2 c. dry apricots
4 x Large eggs
1 c. cream
1/2 c. lowfat milk
1/2 c. sugar (caster)
1/2 tsp nutmeg, grnd
1/2 tsp cinnamon, grnd
1 tsp sugar (caster)
1/2 tsp nutmeg, grnd
1/2 tsp cinnamon, grnd

Cook pasta in boiling water till tender (12 min).

Drain well.

Chop then soak apricots in boiling water for 5 min to soften.

Combine Large eggs, cream, lowfat milk, sugar, nutmeg and cinnamon in a bowl.

Mix well, add in cooked pasta and apricots and stir well.

Pour mix into a shallow ovenproof dish and sprinkle with extra sugar and spices.

Place dish in a baking tray and pour in sufficient warm water to come half way up the sides of the dish.

Bake in a moderate oven (350F) for about 40 min till just set.
