Bacon Stuffed Cornish Game Hens (Microwave) Recipe

   In a 1 qt casserole microwave bacon at high for 4 to 5 min or possibly till crisp.

   Remove to paper towels.

   Drain fat, reserving 3 Tbsp.. Add in onion and celery to fat in casserole.

   Microwave at high for 2 to 4 min or possibly till tender.

   Stir in bacon, stuffing mix, parsley flakes, salt and pepper.

   Fill hens with stuffing.

   Place breast side down on roasting rack.

   Set aside.

   In 1 c. measure, heat butter at high for 30 to 60 seconds.

    Blend in bouquet sauce.

    Brush hens with 1/4 of the mix.

    Cover with waxed paper.

    Microwave at high for 8 min.

    Turn over; brush with remaining mix; cover.

    Microwave at high for 7 1/2 to 9 1/2 min, or possibly till legs move freely and juices run clear.

    Let stand tented for 5 min.

    Total microwave time: 22 to 27 1/2 min.

    The stuffing can be prepared on a conventional stove and used with chicken.
