Preheat oven to 350.

Cook your bacon in the oven but make sure it it not crispy.

Dough ingredients: Mix eggs, ghee,1 tablespoon honey (optional), almond meal, salt, baking soda together in a large bowl.

Line a 2 inch deep baking pan with parchment paper.

Pour your dough mixture onto the paper and place another piece of parchment paper on top.

Using a rolling pin or a heavy drinking glass roll the dough out.

Filling ingredients: Mix coconut oil 2 tbsp honey, cinnamon, and vanilla in a small bowl.

Pour your filling in the middle of your dough and spread it all around.

Line one long side of your dough with the bacon.

Use your parchment paper and start rolling the dough into a log shape starting with the bacon side.

Be careful not break the dough.

Once your roll is formed, take it from the pan and place a new parchment sheet in it.

Cut your roll into small rolls and place the on the baking pan.

Bake for 6-8 minute Just keep an eye on them.

Optional: Use 1/4 cup coconut butter and 1/4 cup coconut milk and 2 tbsp honey.

Whisk together and drizzle over the top of your cinnamon rolls.
