1 x Carrot, sliced thinly
1 x Celery stalk, sliced thinly
1 x Onion, minced
1 Tbsp. Oil
3 x Garlic cloves, sliced
3 c. Warm vegetable stock
7 ounce Can minced tomatoes
1 Tbsp. Minced fresh thyme
14 ounce Can Cannellini beans, liquid removed
1 Tbsp. Tomato paste Salt and Pepper Grated Cheddar Cheese
