2 c. Flour, whole wheat
1 c. Sugar
1/4 c. Wheat germ, toasted
1 c. Brown sugar
1 tsp Cinnamon
1 c. Walnut, minced
1 tsp Salt
2 x Egg, beaten
1/2 tsp Nutmeg
1 tsp Vanilla
4 c. Apple, diced
1/2 c. Oil
2 tsp Baking soda

Sift together whole wheat flour, wheat germ, baking soda, cinnamon, salt and nutmeg.

Set aside.

In large bowl combine peeled and diced apples, sugars, oil, walnuts, Large eggs and vanilla.

Add in flour to mix.

Stir gently.

Blend well.

Turn into 2 or possibly until cake pulls from side of pan.

Cold in pan or possibly rack.

If you like, sprinkle with confectioner's sugar.
